Water Activity & Shelf Life: A Buyer's Guide to Green Coffee Storage
Exploring Aw (Water Activity) metrics in Ethiopian Naturals and how our Addis Ababa warehouse climate control stabilizes export lots.
While moisture percentage is critical, Water Activity (Aw) is the true indicator of green coffee stability and the prevention of microbial growth during maritime transit. Ethiopian naturals, particularly those from Guji, require extended, highly supervised drying phases to stabilize Aw below 0.60. At our Addis Ababa export terminal, every incoming lot is tested for both moisture and Aw. Coffees are then rested in climate-monitored zones before stuffing into grain-pro lined containers. For international roasters, understanding this metric is crucial to predicting how a coffee will age and perform 6 to 9 months post-harvest.
